Pappy's Chicken

Time: About 1¼ hours, including marinating

Yield: 4 servings

1 whole chicken, cut up (or 3-4 pounds chicken parts)
½ cup salad oil
¼ cup vinegar
1 clove garlic, chopped
1 tablespoon onion salt
½ teaspoon salt
½ teaspoon celery salt
½ teaspoon pepper
¼ teaspoon thyme
¼ teaspoon butter
¼ teaspoon rosemary

Whisk together all of the marinade ingredients. Add the chicken and marinate for at least 45 minutes.

Brown the chicken on the grill, then transfer it to a rack set in a pan. Pour the marinade over the chicken, cover with foil, and set the pan back on the grill to finish cooking. Check the level of the marinade occasionally, adding water if it runs nearly dry.

The chicken should be done in about 30 minutes, but as long as there is marinade in the pan it will not dry out or burn.


Notes

Janice uses ¾ cup of Italian salad dressing in place of the homemade marinade.
